Making wine in the Adelaide Hills, South Australia

I spent one afternoon with Rachel Signer, editor and writer and winemaker at her own Cleopatra Wines, in Adelaide Hills, South Australia. We processed Pinot Gris with a manual press, while talking about harvest and how to make natural wine.

I also joined Commune of Button’s team for two weeks of harvest where I got to see (almost) all the steps of winemaking - from early morning picking in the vineyards, followed by sorting out and processing grapes in the winery, cleaning all the machinery, checking out ferments and bottling past vintages, which were now ready to be released on the market.
